Hello, lovelies! Happy Monday! I hope everyone had a fantastic weekend. Just a few things before we get super motivated with our goals!

My original 2012 goals have certainly changed over the past few months, and two goals that I decided to omit were:
1.) To continue my "clean eating".

I've always been a pretty healthy eater, but my husband and I have both made a conscious effort to eliminate processed foods, carbs and sugars - and so far, we're kicking ass. I never weigh myself, but my husband has lost upwards of 15 pounds in the past few weeks. Between cooking smaller portions and eating boatloads of kale (see above - I cannot get enough!), we've been feeling pretty incredible.
2.) To become the next Evelyn Stevens.

Who is this adorable lady? Evelyn is a professional road cyclist who left her job on Wall Street to become a professional road cyclist in NYC. While she didn't win a medal in London, she is a BEAST on the bike.
Now, I know that I am downright delusional in my dreams of becoming a cyclist. I suppose I should start by borrowing a bike. And riding it. And then buy one of my own. And not die.

Since D and I did Whole 30, I've definitely kept a lot of the eating habits...very little processed junk, little to no grains, sugars, etc. I also found that I love fruits and veggies more than I ever would have guessed. Instead of avocado on toast with an egg, I do eggs over arugula with avocado & usually tomatoes. I swear I just feel better!

ReplyDeleteReally? Kale? I remember when I did a CSA one year they gave me three pounds of kale. I was like - one potato and three pounds of kale, you've got to be kidding. I tried everything to like kale but couldn't get it down. Kudos to you for loving it, it's super healthy and good for you!
ReplyDeleteAnd I think in the next few years you could ask Athleta (since Lululemon seems to be taken) to sponsor you and quit teaching and ride your bike around Chicago. Totally a reachable goal!

ReplyDeleteI have heard about kale (homemade kale chips in particular) forEVER it seems like, but I've never been brave enough to try a new food like that! I guess I will soon!
ReplyDeleteHahaha, it's definitely hard to quit Starbucks. Not because I'm addicted (cuz surprisingly, even thought I work there, I hardly drink the coffee), but because I can have one 8-hour shift and see the same set of customers come in at least 4 times during that shift! They've tried quitting, but it's no use haha. Although there are definitely ways of lessening visits, and/or lessening the fat and calories. But I'm sure you're already familiar with all of that, you Starbucks fan, you! :D
ReplyDeleteAfter being sick for 2 weeks, then my birthday celebrations, I have been eating poorly :( Right before I got sick I had signed up for Weight Watchers. Having paid for it it helps inspire me lol. Today I am back on the wagon. Perfect time for me to read this post and your experience with eating healthier!
